Tarragon - Texas
(Tagetes lucida)
- Type: annual
- Planting time: spring, after the last frost
- Features: aromatic leaves, yellow flowers in summer
- Light: sun to part shade
- Height: 14 to 30 inches
- Soil: light, well drained, on the dry side
- Spacing: 18 inches
- Garden use: herb garden, flower border, containers, butterfly garden
- Culinary use: as a substitute for French terragon
Also called Texas terragon, Mexican mint marigold, and occasionally yerba anise, this plant is a great substitute for true French terragon, in warm humid climates where French terragon wanes in the summer. The leaves have a similar anise like flavor and can be used in soups, for fish, chicken salad and other dishes calling for terragon. Although it is technically an annual, Mexican terragon is an evergreen perennial in zones 9 and 10. The pretty plants bloom in late summer and make great additions to an herb garden or flowerbed and also do well in containers.
