
Chinese Eggplant
- Fruit size: 2 inches wide, up to 18 inches long
- Matures: 65 to 80 days
Named after the town of Ping Tung, Taiwan, this long and slender variety has purplish-black skin and almost no bitterness. Plant when the weather has warmed in late spring and early summer. Plants need full sun and well-drained soil. Eggplant demands warm soil; cold soils will stunt or completely hinder growth. In short-season and cool climates, use row covers to keep plants warm enough to grow and fruit well. Plant stems may need support with a stake or a cage. Adding mulch and straw will keep weeds down and retain moisture. Harvest by clipping fruit from the stem when fruit reaches full color and still has glossy skin.
Considered a high quality vegetable, very tender and sweet flavor, Ping Tung is commonly added to Asian soups, salads and stir fries. Try a stir fry with eggplant, bean sprouts, peppers and tomatoes. Space plants 24 to 36 inches apart.
