Like the miniature offspring of big eggplants, purple Hansel and his white-fruited sister eggplant, Gretel, bring charm to the garden and flavor to the table. Hansel, a 2008 All America Selection, begins bearing clusters of 3 to 6 narrow fruit a mere 55 days after setting plants in the garden. The fingerling eggplant are the perfect size for cutting into little rounds for sauteing. You'll find the plant grows nice and neat, no taller than 3 feet and slightly narrower, making it great for either in the ground or in containers. Even if you miss the peak of maturity, these slender eggplants do not get bitter while they wait a few days. For best growth, space plants 2 feet apart after the weather warms consistently above 55 degrees.
