Collards are such a versatile veggie — anything you can do with a cool-weather green (think soups, salads, sautés, stews, casseroles) you can do with collards. Be sure to harvest the leaves often, so the plants won’t outgrow their surroundings. Use the lavender flowers for cooking or crafts, or simply leave them on the plant to enjoy. And don’t feel you have to plant violas, as any small annual will do.
