Ingredients

  • 6 cups cubed watermelon (seedless preferred)
  • 1 cup chopped jicama
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh parsley
  • 1 Tbsp chopped fresh mint
  • 5 Tbsp fresh lime juice
  • ½ cup crumbled feta cheese
  • ¾ tsp kosher salt

Instructions

  • Combine watermelon and next 5 ingredients in a large bowl.
  • Add cheese and toss gently.
  • Sprinkle with salt and serve immediately.
