Spring Strawberry Salad

This salad makes a brightly flavored appetizer or side dish, or turn it into a main dish by topping it with grilled salmon or roasted chicken. Feel free to substitute any fresh herbs you have on hand.

Spring Strawberry Salad

You'll be the star of the barbecue if you bring this colorful, refreshing salad as your side. Or, top it with grilled chicken or salmon and serve it to your family as the perfect warm-weather lunch or dinner.

Yield: 3-4 servings



  • ¾ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp chopped fresh dill
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped fresh parsley
  • 1 tsp minced garlic
  • 1 tsp crushed red pepper flakes


  • Place greens in a large bowl, then top with remaining vegetables and strawberries. Sprinkle with salt and pepper.
  • Prepare dressing by whisking all ingredients together in a small bowl. Pour dressing on top of salad, then top with feta. Toss and serve.
