Chucktown Sour

Ingredients

  • 2 oz Rittenhouse Rye (or Sazerac Rye, Knob Creek Rye)
  • 0.75 oz Sage Infused Lemon Oleo Saccharum
  • 0.25 oz Orange Juice
  • 0.5 oz Lemon Juice
  • 0.5 oz Rosemary Infused Red Wine Float

Garnish: Torched rosemary sprig & dehydrated sugar-soaked lemon peel


Directions

  • Combine all ingredients except red wine into a mixing tin and dry shake for 10 seconds.
  • Add ice and shake again for 10 seconds.
  • Double strain into a rocks glass with fresh ice.
  • Float red wine on top using a bar spoon.
  • Garnish with torched rosemary and lemon peel.

Sage Infused Lemon Oleo Saccharum

  • Peel and slice 4 lemons into wheels
  • 1 cup sugar
  • Mix lemons and sugar in a container and coat thoroughly.
  • Cover and let sit overnight.
  • Strain and press to extract oils.
  • Warm with sage on low heat, then cool and strain.

Rosemary Infused Red Wine Float

  • Warm gently with rosemary (do not boil).
  • Cool completely and strain.
