Ingredients
- 1.5 oz Bayab African Rose Water Gin (or NA alternative)
- 0.5 oz Fresh Lemon Thyme Syrup
- 1.5 oz Garden Tisane
- 0.5 oz Fresh Lemon Juice
- Sparkling water (to top)
Garnish: Lemon thyme sprig, dehydrated citrus wheel, optional lavender or mint

Directions
- Add gin, syrup, tisane, and lemon juice to a shaker with ice.
- Shake lightly to chill.
- Strain into a highball glass with fresh ice.
- Top with sparkling water and stir gently.
- Garnish and serve.
Garden Tisane
- Lemongrass (chopped)
- Chamomile flowers
- Mint leaves
- Basil leaves
- Lavender blossoms
- 1½ cups hot water
- Lightly bruise herbs.
- Steep in hot water for 8–10 minutes.
- Strain and cool completely.
Lemon Thyme Syrup
- 1 cup sugar
- 1 cup water
- 5–6 sprigs lemon thyme
- Heat sugar and water until dissolved.
- Add thyme and steep 20 minutes.
- Strain and cool.
