- 6 snack-sized sweet peppers or jalapeño peppers, sliced thin
- ½ cup all-purpose flour
- ½ cup water
- 1 egg, lightly beaten
- Sea salt and freshly ground black pepper to taste
- Oil for frying
- 2 tbsp sour cream
- 2 tsp Old Bay or other cajun seasoning
- ½ tsp paprika
- ¼ tsp salt
- Cayenne pepper to taste
- Heat oil to 350°F. If you are using a pot or skillet to fry on your stovetop, be sure the oil is at least 1.5 inches deep.
- Mix all dipping sauce ingredients together and set aside. Combine the flour, water, and beaten egg together in a small bowl and mix until smooth. Coat each pepper slice in the batter.
- Carefully place battered rings into the hot oil (a fork works very well for this if you don't have a skimmer or fry basket). Cook for 5-8 minutes or until coating is crispy and golden brown.
- Scoop rings out with a skimmer or slotted spoon, shake gently to remove excess oil, then transfer to a paper towel-lined baking sheet. Add salt and pepper to taste, toss to coat, and serve immediately.
